Is raw egg in cocktails safe?
Cocktails like the Whiskey Sour, Pisco Sour, Clover Club and Ramos Fizz use raw egg white for body and foam. Raw eggs can carry Salmonella, and the CDC and USDA advise against eating them raw, especially for young children, older adults, pregnant people and anyone with a weaker immune system.
- Use pasteurized egg whites, sold in cartons or pasteurized in the shell, to lower the risk.
- Keep eggs refrigerated and use clean, uncracked ones.
- The egg is optional in several IBA recipes, such as the Whiskey Sour and the Illegal.
