How to make simple syrup
Simple syrup, also sold as sugar syrup, is the standard sweetener in many cocktails.
- 1:1 syrup: stir equal parts sugar and hot water by volume until the sugar dissolves, then cool. This is what most recipes mean by "simple syrup".
- 2:1 rich syrup: two parts sugar to one part water. It is sweeter and thicker, so you use less.
- Keep it in a clean, covered bottle in the fridge and use it within a few weeks. A splash of vodka is sometimes added to help it keep.
Honey syrup is made the same way with honey and warm water, usually in equal parts.
